Helen’s Coffee Cake

Weekends growing up (especially when friends spent the night) always started with a familiar, sweet smell of cinnamon and cake… but better. I took that tradition to college and law school, baking my mom, Helen’s coffee cake for friends.

My mom’s coffee cake has always been a true comfort food. I’ve shared the recipe from time to time, but never here. It’s time!

 Preheat to 325* For the cake, mix…

1 box yellow cake mix

1 box instant vanilla pudding

1 cup water

1 cup and 1 tablespoon oil

4 eggs

Pour half the mix into a greased Bundt pan. Mix 9 tablespoons light brown sugar and 1 and 1/2 tablespoons of cinnamon in a separate bowl. Pour half of the sugar mix on top of the batter and swirl into the batter. Repeat with other half of batter and sugar.

Bake 40-45 minutes. Enjoy!
