Whipped Feta

My dear friends, the Shermans and the Hatches took me to an awesome NOLA restaurant called Domenica. They quickly ordered the cauliflower and whipped feta. I skeptically tried it out and was totally blown away. Now, whenever I have feta, whipped cream cheese and literally any other soft cheese, I make my own version of this salty, creamy life-changing topping. It’s perfect to top some fresh or roasted veggies. Or just eat it by the spoonful!


Whipped Feta Recipe

 

  • 6 oz good feta
  • 2 oz whipped cream cheese
  • 2 oz ricotta
  • 4 tablespoons olive oil
  • Coarse salt
  • Red pepper flakes or pepper

Smash, mash or otherwise process the feta. Whip in the cream cheese and ricotta. A food processor is helpful, but you can use beaters or a whisk. Add one tablespoon at a time as needed for consistency. Top with coarse salt and red pepper flakes or pepper.

Make it your own! Mix up the cheeses, add and subtract other creamy cheeses (like goat cheese).

I use it to top my Greek salad but it goes great with fresh vegetables like a crudité or dip roasted cauliflower like the original recipe.
